One of my favorite parts of the incredible French Bridal Shower my sister gave me were the recipe cards she included in the invitations. Whether or not my family and friends could celebrate with us, they could send me their favorite recipe. I absolutely loved the concept and started salivating immediately with all the recipes I now have in my repertoire – creamy cauliflower to anise cookies to Texas caviar. This recipe for sugared nuts was the one my mom included. It was a recipe my dear aunt used to make during the holidays. In my mom’s search, she discovered it was my grandma’s recipe originally, which makes it all the more special to us. I think that it also means these are a guilt-free treat since there’s so much meaning behind each bite. Wishful thinking, I know. I did make one major change to the recipe and that is to use a mix of nuts instead of just walnuts. I really love the peanuts in here and of course the pecans are delicious. You can use whatever unsalted, raw nuts you like or have on hand. I have to warn you that the mix of nuts makes more “seconds” all the more likely.
I used Zulka Pure cane sugar for these sugared nuts. It replaces refined sugar cup for cup, making it a better alternative for my baking and cooking.
SUGARED MIXED NUTS
- 3 Cups sugar
- 1/2 Cup sour cream
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 4 Cups raw, unsalted nuts (all the same or a mix)
- Heat sugar, sour cream, and butter in saucepan over medium heat, stirring constantly. Bring to violent boil. Remove from heat. Add vanilla and cinnamon. Mix in thoroughly.
- Add nuts, mixing thoroughly to cover every nut.
- Spread nuts on waxed paper to cool. Let sit at least forty five minutes before breaking apart.
