Cucumber Lemonade

This super simple cucumber lemonade is a longtime favorite I rediscover every summer. And this summer is no different!

I’ve never been a big juice drinker, but after discovering watermelon juice and cucumber lemonade from visits to Abbot Kinney in Venice, CA, I’ve been making exceptions. I think the summer fruits are lighter and the natural sweetness is just right for me!

Cucumber Lemonade

I try to eat greens, but sometimes that’s easier than others. Unless green apples are smothered in peanut butter or baked into a crisp, I find it more work to eat my necessary greens.

Cucumbers, however, are easy for me to consume on the regular – I just need to remember to do it more often. I love them with hummus and on salads. I also love homemade everything bagel seasoning sprinkled on cucumber slices. So. SO. Good!

You can have too many cucumbers, however, especially if you’re growing them, so juicing them is my favorite thing. One of the easier answers to summer produce!!

My homemade recipe can be a bit more ‘rustic,’ as I like to call it, as it’s a bit thicker with chunkier cucumber juice and less sweet. You can, of course, puree the cucumber juice more and strain it if you want a finer consistency (I switch off).

How to Make Cucumber Juice?

There’s something about making juice that seems labor and time intensive, but that couldn’t be farther from the truth. You can see some great video of making cucumber juice. It involves a bit of chopping and a blender or food chopper.

You can either drink the cucumber juice with bits of cucumber in it, or you can strain it for a ‘purer’ juice!

Note that if you don’t strain the juice and you let it sit for a while, the fruit and juice may separate a bit. Simply shake or stir them back together!

If you want to drink this lemonade immediately, shake it with a few ice cubes and then pour it over ice (removing the cubes you shook it with). I like to do this in a canning jar with one of these reusable plastic lids.

Lemonade Recipes

I’m actually quite a big fan of flavored lemonades. In summer, this fresh peach lemonade is a must and this rosemary lemonade slushie is so refreshing.

In fall and winter, try this pomegranate lemonade (easily made into an adult beverage). And if you can find them, prickly pear lemonade is a fun one!

And lavender lemonade is good basically every day of the year!

Mocktail or Cocktail?

This recipe is titled a “mocktail” because it tastes like a refreshing drink that’s full of flavor. I also love that it can easily be made into a spirited sip!

CUCUMBER LEMONADE

After a fun visit to the nearly iconic LA eatery, Lemonade, I couldn't wait to make a homemade version of their cucumber lemonade. It might sound tricky, but it's actually just your classic lemonade recipe with pureed cucumber (without skins) turned juice! It's a fun twist on the familiar flavor with some added health benefits!

Ingredients

  • 2 large english cucumbers
  • ½ Cup fresh lemon juice
  • 2 Cups water
  • â…” Cup simple syrup more to taste
  • ice
  • for the rim optional: Dip glass rim in a plate of honey and then in mixture of lime zest, sugar, and salt

Instructions

  • Slice ¼ of one of the cucumber into thin slices. Set aside.
  • Peel and chop remaining cucumber. Place in food processor or blender until cucumber puree has few chunks. This will yield about 2 ½ Cups.
  • Combine puree, lemon juice, water, and simple syrup.
  • Refrigerate and serve over ice.
