I’m a sucker for homemade waffles. I never order them at restaurants, but I love them at home. They come together so quickly and I love adding in various ingredients for an entirely new flavor profile (try the ham & cheese waffle recipe just to start) – and now these vanilla waffles.

My husband is also a big fan of them. I love sending him to work with leftover waffles because they’re easily reheated in the toaster oven and a special treat to start the workday.

Apparently the smell of homemade waffles in the toaster, however, causes a bit of a stir in the office, so I’ve been asked to send in extras whenever I can – a request I’m happy to oblige whenever possible…

Vanilla Waffles

These vanilla waffles are more dense than most homemade waffles. I wanted them to be heartier and maybe a bit more like Belgian waffles. I added quite a bit more flour to get that density, but I really love how they turned out.

I also imagined a very cardamom-focused flavor, but with just two teaspoons, it isn’t very strong – more of a subtle hint. If you love cardamom, I’d highly recommend adding closer to three teaspoons for a more prevalent flavor. And while you’re at it, you can up the vanilla too!

It’s funny the things you bestow upon your significant other over time, isn’t it? When we started dating, we enjoyed many breakfasts at a great spot in San Francisco’s Mission District called Bugaloos (sadly closed now). This guy I’d just started dating didn’t put butter on his pancakes or waffles – just oodles of syrup. What?! I’d never seen anyone do such a silly thing!

Now, almost eight years later, my husband uses more butter on his waffles than me! Never fear, he still douses them in maple syrup, but at least he has all the necessary ingredients now!

If you’re wondering what I picked up, it’s probably a need for sriracha and tapatio in the house at all times. I love a bit of spice!

VANILLA WAFFLES

If there’s ever a dessert with cardamom on the menu, you can guarantee I’ll order it. It’s such a delicious flavor that isn’t used nearly enough. This waffle recipe highlights the tasty spice but not in a dessert! Though the flavors might sound a little too unique, I can’t encourage you enough to give them a go!

Ingredients

  • 2 cups milk
  • 1 tablespoon vinegar
  • 2 eggs
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla
  • 2¾ cups flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2-3 teaspoons cardamom
  • ½ cup sliced, blanched almonds

Instructions

  • Preheat waffle iron.
  • Measure milk and add vinegar. Set aside. Mix eggs, melted butter, vanilla, and milk mixture in large bowl. Add remaining ingredients. Mix well.
  • Scoop heaping ½ Cup spoonfuls onto waffle iron. Remove waffles when desired crispiness is achieved. Some waffles may require flipping and a few extra minutes to cook through.
