Homemade Fajita Seasoning
We like Mexican food in this household. That’s really an understatement. We are OBSESSED with Mexican food. To give you an example, the week after we got back from Italy, we ate Mexican food or something similar five times. Yeah – it’s over the top and we wouldn’t have it any other way! What can we say, we’re Californian through and through. Because of our little obsession, I’ve had some experience at making homemade fajita vegetables with healthy, homemade fajita seasoning and now I’ve got it down pretty well! Half of my secret is the seasonings…
How do you make homemade fajitas?
The other trick to perfectly homemade fajita veggies besides the seasonings is to give it time. After all, the meat and, especially, the vegetables need to caramelize and become one with all the spices. I only showed peppers and onions here, but I use the same seasoning on any vegetable as well as chicken, fish, and beef. The recipe for the seasoning below makes a small, single batch, but you could easily make a big batch of it to always have on hand. If you’re cooking fish, lightly sprinkle the seasoning on the fish. For chicken and especially beef, you want a heartier sprinkle since they have stronger flavors!

We’ve discovered that whatever kind of taco, burrito, or fajitas we’re enjoying for dinner, it’s the garnishes that really make this simple and inexpensive meal so mouthwateringly delicious. Besides the protein, veggies, rice, and beans, toppings include fresh cilantro, avocado/guacamole, homemade pico de gallo, and sour cream. I always try to have at least one or two of these special toppings for our homemade Mexican dinner!

HOMEMADE FAJITA SEASONING + VEGETABLES
My husband and I could almost live on homemade Mexican food. With so my practice, I finally got my homemade seasoning mix down pat. I usually just eyeball each of the seasonings, but until you get the hang of it, just try this easy recipe. It’s great to make in bulk too, so you can just have a small jar of the mix!
homemade fajita seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon chili flakes or to taste
- 1 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/2 teaspoon cumin
- 1 medium onion sliced
- 1 medium bell pepper sliced
- 2 tablespoons olive oil
- 3 1/2 teaspoons homemade fajita seasoning
- Heat oil in skillet over medium-high heat. Add veggies and seasonings to pan. Mix well. Cook over medium-high heat for 3-5 minutes, stirring occasionally.
- Turn heat to medium and continue to cook, stirring occasionally 10-15 minutes until onions and peppers are tender and caramelized.
