Sometimes photos just don’t do recipes justice. Even with my pretty fool-proof kitchen setup and my props, there are a few dishes that just don’t photograph well no matter how delicious they really are. I’m over the moon excited that this roasted bell pepper toast with herbed goat cheese isn’t one of them. The vibrant colors of the fresh herbs and the roasted bell peppers pop immediately and still have me salivating for these toasts!
Roasted Red Pepper Recipes
This recipe comes together so fast and is great as part of a quick dinner with a salad or as a last minute appetizer for guests. You can grab everything at the store and have a beautiful and delicious offering in no time. The best part is that because the toast is meant to be served at room temperature, you can leave them out without losing flavor – just be sure to cool the toast on a wire rack to release moisture.

I’m a big fan of Trader Joe’s for inexpensive but tasty cheese. You can also pick up a loaf of their multigrain bread, fresh herbs, and jarred roasted bell peppers. These peppers are from Melissa’s Produce jar of roasted red peppers and are quite a bit more flavorful but aren’t as easy to come by. You could also roast bell peppers yourself. No matter the path you choose, you’ll end up with a delicious dish. If you have extra bell peppers, turn them into smoky romesco sauce to eat with just about anything!

Herbed goat cheese sound fancy, tastes phenomenal, and is impossibly easy to make. I like to add yogurt to my goat cheese to make it even easier to spread/dip. Adding in fresh herbs, lemon zest, or pretty much anything your heart desires (sweet or savory) is so easy. Add your flavors a little at a time and taste it as you go to get it just right!

FIRE ROASTED BELL PEPPER TOAST W. HERBED GOAT CHEESE
In Los Angeles, restaurants seem to close almost as soon as they open. This Bell Pepper toast is the homemade version of a delicious dish I had at one such restaurant. I swapped out butter and hard cheese for the herbed goat cheese. Sadly the restaurant has closed its doors, but I can continue enjoying these flavors for years to come.
Ingredients
herbed goat cheese
- 3 oz. goat cheese
- 1/4 Cup nonfat greek yogurt
- 1/4 Cup finely chopped herbs chives & cilantro used here
- salt and pepper
toasts
- 6 slices hearty bread
- fire roasted bell peppers I used Melissa's or roast your own
- optional topping: sesame seeds
Instructions

- Combine goat cheese, yogurt, and herbs. Season with salt and pepper to taste. Set aside.
bell peppered toasts
- Toast sliced bread until edges are golden. Let toast cool on wire rack before topping with goat cheese.
- Lay pieces of roasted bell pepper over cheese. Top with sesame seeds and chopped chives if desired.
