For my guy’s birthday soiree last week, I wanted to provide a non-alcoholic drink in case anybody didn’t want beer or wine and for all those friends/family driving home. I started out with the idea of a blackberry lemonade since my husband’s favorite fruit is blackberries.
Then I added the ginger beer in lieu of simple syrup and did a taste test. It was ok, certainly not amazing. So I decided to add some honey. Truthfully, I really just didn’t want to make a batch of simple syrup at this point. I liked the flavor but knew something was still missing.
I immediately thought of mint leaves, which, sadly, is second only to broccoli on his least favorite food list. But I had mint on the brain after a follower asked me for some recipes last week. I knew my guy wasn’t likely to drink the lemonade anyway (opting instead for a good beer or whiskey). And because I just can’t serve something that’s blah, fresh mint is now part of the recipe.
I let the blackberry honey lemonade marinate for a while and ended up with a huge hit of a drink. The honey is a quick and easy sweetener and while you don’t have to heat it, it’s much easier for mixing into the drink. Because I’m known for my sangria recipes, however, everyone was asking what was in the drink. When I told them all the ingredients, they asked what wine I used. They couldn’t believe I didn’t make a sangria out of it. As predicted, my husband had little interest in the drink because of the mint, but after everyone raved about the mix (many adding it to gin or vodka), he gave it a sip and even he admitted it was good! I guess blackberry honey lemonade passes the test as a favorite for everyone!
BLACKBERRY HONEY LEMONADE
I'm not really a big classic lemonade fan, but I love making lemonades with other fruits and flavors added. Inspired by my husband's love for blackberries and ginger beer, I made this tasty sip for a get-together we had for his birthday. I wasn't an alcohol-free drink to offer. Some friends enjoyed it as such and other mixed it with rum or vodka for a tasty cocktail of their own!
- 1/2 Cup lemon juice
- 3 Cups water
- 1-12 oz. bottle Ginger Beer I like Reed's
- 1 Cup fresh blackberries
- 2 Tablespoons honey
- fresh mint
Combine lemon juice, water, ginger beer, and berries in pitcher. Using spoon, squish a few berries to release color.
In a small bowl, microwave honey 10 seconds to melt. Add honey to lemonade and mix thoroughly.
Add mint sprigs to pitcher.
Cover and refrigerate at least 3 hours.
Serve with ice.
