I joke that it’s Cinco de Mayo all year round in our house. We eat Mexican flavors at least twice per week and more is common. When my husband and I started dating, we decided we were perfect together because we both loved sour cream and cilantro. We had a lot of dates at the local Mexican food spots in the San Francisco Mission District as you can imagine! I quickly learned that he has a huge weakness for chips. I even call him a ‘Chip Monster’ on occasion. My weakness is just for tortilla chips since good chips and salsa (especially homemade pico de gallo) or guacamole are pretty much impossible for me to refuse. Tomatillo Recipe | Roasted Tomatillo Guacamole
I steered away from tomatillos for a long time, not really understanding how to cook them or even what flavor they had. Of course, I was a fan of tomatillo salsa all along, not realizing what it was! For this recipe, I roasted the tomatillos in the toaster oven, but you can easily broil them in your oven – super simple. It’s a very quick thing too, so there’s no planning ahead and the toaster oven means you don’t have to massively heat up your home for this deliciousness! In fact you can roast them while you get everything else ready for this healthy avocado dip.
Tomatillo Guacamole Salsa | Healthy Avocado Dip
I’m a huge fan of just plain old guacamole. Heck, we think mashed avocado with salt, cumin, and garlic powder is pretty interesting. We whip it up during the week to have with tortilla chips and tacos. Honestly, we have it as often as we get avocados in the house. No shame over here! This healthy avocado dip recipe is a take on guacamole and salsa while adding in a bit of quinoa for more protein. Tomatillo guacamole salsa is the finger-licking, chip-dipping combination of two flavors that are almost too delicious to be legal!

ROASTED TOMATILLO GUACAMOLE DIP
Have you every had tomatillos? Hidden in their paperlike wrappers, they're packed full of flavor and color. Roasting them makes them even tastier and they're the perfect add in to this guacamole dip with quinoa!
roasted tomatillo puree
- olive oil or cooking spray
- 15 tomatillos
- 1/3 cup finely chopped onions
- 1/4 teaspoons salt
- 3/4 teaspoon cumin
- 2 cups roasted tomatillo puree
- 2 shallots minced
- 3 avocados cubed
- 3/4 cup cooked quinoa
- 1/2 cup chopped cilantro
how to roast tomatillos + tomatillo puree
- Preheat oven to broil.
- Peel outer skin of tomatillos. Rinse under warm water to remove stickiness. Spread tomatillos on baking sheet. Broil for a few minutes. Flip and broil for a few more minutes until tender. Remove from oven.
- Lower oven temperature to 400 degrees.
- Puree roasted tomatillos in mini food processor. Mix with onions, salt, and cumin. Set aside.
- Combine tomatillo puree, shallots, and cubed avocados in large bowl. Mash together with potato masher until well mixed and avocados are broken down a bit.
- Stir in quinoa and cilantro.
- Season to taste with salt.
