One of my favorite food flavor combinations is sweet potato and avocado. Both can easily take on a sweet or savory flavor and somehow they compliment each other perfectly. Of course it helps that I could eat each of them every day, but even still, the combo is a necessity in life. When I first tried these sweet potato crackers, I don’t know what I was expecting, but they really do taste like sweet potatoes and offer that blank canvas if you will for flavor toppings. Obviously I opted for an avocado cracker topping this time around. I could have stopped there (it was tasty), but we had some sun-dried tomatoes left over from another recipe that were basically begging to be put on top. And then, because sun-dried tomatoes are possibly the hardest thing for me to photograph, I added some cilantro! So, so yummy and the crackers are made with whole grains, so it’s healthy on top of being delicious…
These Breton Artisanal Sweet Potato and Ancient Grains Crackers with the avocado cracker topping would be great if you’re on your own, but why not share deliciousness with friends? Usually when I think of entertaining, I plan for six or more people, but that just doesn’t have to be the case! This tasty cracker combo, my favorite homemade Omega-3 trail mix, and some iced tea lemonade were the perfect setup when I invited a friend over to catch up recently. It all came together in less than ten minutes and I love how it all turned out! All of it was so simple but yet the setup (and the flavors) were a real treat! Life is busy enough, so effortless get-togethers are a must. With Breton’s variety of flavors and textures, the number of ways to enjoy them (topped or on their own) are endless. I loved this simple setup, but it’s delicious and elegant enough for party of any kind!
SUN-DRIED TOMATO + AVOCADO CRACKER TOPPING
Have you ever invited friends over for dinner only to realize you didn't plan anything for them to snack or drink while you finished prepping dinner? I'm sort of notorious for this and I love combining whatever cracker and topping I have on hand. This avocado and sun-dried tomato is one of my favorite concoctions to woo guests in no time!
- 1 small avocado halved and pitted
- 1/4 cup sun-dried tomatoes in olive oil drained*
- 12 Breton Artisanal Sweet Potato and Ancient Grains Crackers
- Score avocado halves in both directions, forming a grid. Scoop avocado into bowl. Using spoon, mix and gently mash avocado pieces. Divide evenly between crackers. Sprinkle with salt.
- Top each cracker and avocado with 2-3 small pieces of sun-dried tomato and cilantro. Serve immediately.
