There’s something wonderful about Thanksgiving (and an easy Friendsgiving gathering too!). If you forget all the stuff that comes after this holiday, it truly is one of the best and I am finding more and more people who claim Thanksgiving as their favorite holiday.
So let’s ignore the sales, the shipping, and all the to dos that begin after Thanksgiving. Instead, let’s enjoy and look forward to the wonderful excuse to get together with loved ones (friends and family)!
And let’s super enjoy the food part because, well, I love food. A lot of people I know look forward to the Thanksgiving meal itself. Others really just want the leftovers.
My mom’s slew of leftover recipes was numerous, I’m sure, but I only remember a pasta Alfredo with turkey and turkey enchiladas!
My famous thanksgiving leftover dish (for only my husband at this point) are my turkey carnitas! I have a few other recipes, however, as well as some great ways to use some of those other fixings – namely the baked sweet potatoes and the cranberry sauce!

One year, my husband and I brought a crazy amount to turkey leftovers from Thanksgiving home with us. Looking for a fun way to mix up the familiar flavor, I decided to “fry” them in oil and my favorite fajita seasonings.
