This is one of those recipes that I’ve been dreaming about making for a really long time. I think I first got the idea a few years ago and every time we’ve made chocolate chip cookies, I thought of it again. The recipe is really my favorite chocolate chip cookie recipe with extra nuts in place of the chocolate chips. With such an easy change to a recipe and with so many years of anticipation, I was actually nervous it wouldn’t turn out as deliciously as I hoped. But lo and behold, these butter pecan cookies were just as magical as I’d imagined…
Homemade Butter Pecan Cookies
Last week, I had a cookie/holiday dessert baking extravaganza with a friend. I brought these cookies (along with these perfect ginger molasses cookies). She and I bake completely different types of food, but it was so much fun baking and tasting each other’s recipes.
After such a crazy week (with the election and some traumatizing news from a dear friend), I needed the serenity of baking in good company. We’d planned this cookie baking date weeks ago, but little did I know how perfect the timing would be!
And luckily my treats were a hit. She even messaged me later that night to tell me how much she loved these butter pecan cookies!
Hosting a Cookie Exchange
So, I’ve been to a few cookie exchange parties and, to be honest, I don’t love them. First of all, all the cookies start to taste the same (not in a good way) when you take them home. Second, we all worry that someone else is going to make the same type of cookies.
Frankly, I’m totally down with ALL the cookies. It’s terrible, I know, but cookies make my world go round! Anyway, I hosted a cookie exchange party where I baked all the cookies and had friends bring all the drinks and snacks! It was perfect and everyone was happy, including me with all my many cookies!!
BUTTER PECAN COOKIES
I'm such a sucker for homemade cookies. We always have at least one variety in our freezer (to keep their freshness) and these butter pecan cookies are usually the main suspect. It's a classic chocolate chip recipe with chopped pecans in place of the chips. So easy and delicious!
- 2 1/2 Cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 Cup sugar
- 3/4 Cup brown sugar
- 1 Cup butter softened
- 1 teaspoon vanilla
- 2 eggs
- 2 Cups finely chopped pecans
- Preheat oven to 375 degrees.
- Combine flour, baking soda, and salt in a medium bowl. Set aside.
- In a large bowl, beat sugars, butter, vanilla, and eggs. Add flour mixture to batter and mix until just combined. Add nuts and beat until completely mixed.
- Scoop roughly 1 1/2 tablespoons of dough onto cookie sheet, leaving about 2-inches of space between each cookie.
- Bake 10-12 minutes until set.
- Let cool.
