Only in the last few years have I really gotten into shellfish. I’ve always liked shrimp, but now I’m a sucker for steamed mussels, cioppino, and scallops when we’re out for dinner. Though my love for them is great, I have been hesitant to make any of those dishes at home – until now. This seared scallops recipe is unbelievably simple and quick. These easy scallops cook to perfection – not overcooked at all – in a matter of minutes. Amazing, right? The scallops takes all of five minutes and you have a delicious appetizer or meal.
I paired it with pea pesto, thinned down with a bit of olive oil and it was a perfect combination. I think steamed mussels (with a big piece of toasty bread of course) will have to be my next shellfish experiment before moving onto cioppino. Some things you just have to be handle one step at a time, especially when it comes to homemade deliciousness.
Seared Scallops Recipe
I think the number one mistake when cooking fish (shellfish included) is that we’re so afraid of undercooking fish that we cook it for far too long. Then we go out and get sushi (raw fish).
The trick to fish, because it’s delicate in texture and flavor, is to cook it just enough and then let the heat and flavors marry for a few minutes before enjoying!
This seared scallops recipe is just like this. Because of that, make sure you have everything else ready.
Have drinks in hand, when you start cooking these guys (or gals, I’m not sure). You can start putting food on the table and even get people in their seats when you start. It really takes that little of time to cook and enjoy!
SEARED SCALLOPS RECIPE + PEA PESTO
Delicious seared scallops are so easy and take no time at all. Here's my go to foolproof method for seared scallops along with a perfect pea pesto accompaniment!
- 1- 11/4 lbs scallops
- 2 teaspoons butter
- 2 teaspoons olive oil
- salt & pepper
pea pesto sauce
- 1/3 cup pea pesto
- 4 teaspoons olive oil
- Remove any side muscle from scallops. Lay flat on paper towel. Pat scallops with towel to dry. Sprinkle each scallop with salt and pepper.
- Heat butter and olive oil over high heat in large saute pan until it begins to smoke. Quickly but gently add the scallops. Cook for 1 1/2 minutes. Flip. Cook for 1 1/2 minutes. Remove to plate and enjoy immediately.
pea pesto sauce
- Combine pea pesto (can be made ahead of time) with olive oil. Spread on platter before cooking scallops. Serve extra pea pesto to accompany scallops.
