PEANUT BUTTER GRANOLA COOKIES

Ingredients

  • 1 cup peanut butter
  • 1 cup butter at room temperature
  • 1 cup sugar
  • 1 cup brown sugar
  • ¼ cup milk
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 2 cups granola
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Preheat oven to 375 degrees.
  • Cream peanut butter, butter, and sugars in large bowl or bowl of stand mixer. Beat in milk, eggs, and vanilla.
  • In a separate bowl, combine flour, baking soda, and salt.
  • Add flour mixture and granola to batter, one cup at a time to incorporate.
  • Roll two tablespoons of dough into balls. Place at least 1-inch apart on ungreased baking sheet.
  • Bake 10-12 minutes until just starting to golden.
