PATRIOTIC FLAG WAFFLES

I like having a little fun with food to celebrate a holiday. I started smothering my waffles in yogurt for added protein and then blueberries for a bit of sweet. When it was time for Memorial Day and 4th of July breakfasts a while ago, I immediately thought of this combo with the addition of a little strawberry jam. Now it's a yearly tradition to have patriotic waffles every summer!

Ingredients

  • 2 eggs
  • 2 cups flour
  • 1 ¾ cups milk nonfat is fine
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup chopped walnuts
  • toppings: Greek yogurt strawberry jam (homemade recipe here), and fresh blueberries

Instructions

  • Preheat waffle iron to highest setting.
  • In a bowl, beat eggs. Add remaining ingredients. Stir until just combined. Let sit 2-3 minutes. Stir again.
  • Ladle heaping ¼ cup spoonfuls onto hot waffle iron, spreading batter around to evenly coat waffle form. Cook to desired doneness.
  • Top with greek yogurt, jam, and berries.
