ROASTED CAULIFLOWER HUMMUS

Roasted cauliflower might be my all time favorite way to eat a vegetable, but please don't make me commit. During the recent cauliflower craze, I decided to try a roasted cauliflower dip based on hummus. Mixed with white beans, this hummus is subtle in flavor and perfect with your favorite dippers!

Ingredients

  • 1 head cauliflower chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked pepper
  • 2 garlic cloves
  • 1-15 oz. can cannellini or white beans drained (reserve liquid)
  • ½ teaspoon lemon zest
  • 1 ½ teaspoons lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 ½ teaspoons sugar

Instructions

  • Preheat oven to 400 degrees.
  • Combine cauliflower, olive oil, salt, and pepper on large sheet pan. Spread cauliflower evenly. Bake 25-30 minutes until tender.
  • In a food processor, add garlic cloves. Pulse to mince. Add beans, cauliflower, lemon zest and juice, salt, sugar, and ¼ Cup reserved liquid from beans. Puree until desired consistency. For creamier texture, add more olive oil.
