Leftover Turkey Chili

Stuck with leftover turkey but can't stand the thought of another sandwich? Try this delicious leftover turkey chili with white beans for a scrumptious dinner after the holiday is over! You can use shredded chicken and you can actually enjoy this recipe year round!

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 cup chopped yellow onion
  • 2 garlic cloves minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 4 cups unsalted chicken stock
  • 1 4 oz. can green chilies
  • 15 oz low-sodium white beans, rinsed and drained
  • 4 cups shredded leftover turkey
  • 1 to 1 ½ teaspoons fine sea salt*
  • To serve: chopped cilantro, sour cream, and tortilla chips

Instructions

  • Heat the olive oil over medium-high in a large soup pot. Add the onion and then the garlic and cook for 3 minutes, just until the onion begins to soften. Stir in the chili powder and cumin to coat the onion.
  • Pour in the chicken stock and stir well. Add the chilies and the beans. Reduce the heat and simmer for 5 minutes. Add the turkey and cook until heated through, about 2 minutes. Stir in salt to taste.
  • Serve topped with cilantro, sour cream and crumbled tortilla chips.

Notes

*The amount of salted needed will depend on the seasoning of the leftover turkey you use.
