1.5poundssmall potatoessteamed just until tender and sliced or quartered
4ouncesgreen beanscut into 1 ½ inch pieces and steamed or blanched
2large hardboiled eggssliced
¼cupdill sprigs
Flaked sea saltto taste
Cracked black pepperto taste
Instructions
Whisk together all dressing ingredients in a small bowl until blended. Set aside.
Arrange the potatoes and green beans in a shallow platter or on a sheet pan. Pour half of the dressing over all and gently stir to distribute the dressing, being careful not to break up the potatoes. Transfer to your serving plate or platter.
Add the sliced egg, tucking it into spots around the platter between potatoes. Drizzle the remaining dressing over the salad. Add sprigs of dill. Then season to taste with flaked salt and black pepper.
