Delicious seared scallops are so easy and take no time at all. Here's my go to foolproof method for seared scallops along with a perfect pea pesto accompaniment!
Remove any side muscle from scallops. Lay flat on paper towel. Pat scallops with towel to dry. Sprinkle each scallop with salt and pepper.
Heat butter and olive oil over high heat in large saute pan until it begins to smoke. Quickly but gently add the scallops. Cook for 1 ½ minutes. Flip. Cook for 1 ½ minutes. Remove to plate and enjoy immediately.
pea pesto sauce
Combine pea pesto (can be made ahead of time) with olive oil. Spread on platter before cooking scallops. Serve extra pea pesto to accompany scallops.
