I saw a feature in Food & Wine magazine for a company selling microchip cookies and I just loved the idea. Truth be told, I'm a sucker for anything chocolate chip cookie related, big or small. Making these little bites takes a bit of time, so get some help in the kitchen. Everyone will love how fun these mini chocolate chip cookies are to eat!
In a large bowl, combine butter, sugars, vanilla, and egg. In a separate bowl, combine flour, soda, and salt. Add dry mixture to batter. Mix thoroughly.
Roll chocolate chips individually in approximately ½ teaspoon dough. Place on ungreased baking sheets one-inch apart. Do not place cookie batter on warm pan.
