VANILLA WAFFLES

If there's ever a dessert with cardamom on the menu, you can guarantee I'll order it. It's such a delicious flavor that isn't used nearly enough. This waffle recipe highlights the tasty spice but not in a dessert! Though the flavors might sound a little too unique, I can't encourage you enough to give them a go!

  • 2 cups buttermilk*
  • 2 eggs
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla
  • 2¾ cups flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2-3 teaspoons cardamom
  • ½ cup sliced, blanched almonds

Instructions

  • Preheat waffle iron.
  • Mix buttermilk, eggs, melted butter, vanilla, and milk mixture in large bowl. Add remaining ingredients: flour, sugar, salt, baking powder, and cardamom, if using. Mix well.
  • Scoop heaping ½ cup spoonfuls onto waffle iron. Remove waffles when desired crispiness is achieved to cooling rack to prevent from getting soggy.

Notes

*if you don't have buttermilk, simply add 1 tablespoon lemon juice or white vinegar to 2 cups of milk. Let sit for a few minutes. The acid will curdle the milk and give you the buttermilk flavor!
