Ingredients

DRESSING

  • ¼ cup fresh orange juice
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt

SALAD

  • 6 cups red/purple cabbage thinly sliced (1 small head)
  • 2 navel oranges peeled and sliced
  • 2 mandarins peeled and sliced
  • 1 scallion white and green portion sliced
  • ¼ teaspoon salt or to taste

Instructions

  • Whisk together the dressing ingredients in a small bowl until smooth.
  • Place the cabbage in a serving bowl. Add the oranges, mandarins, and scallion. Pour in the dressing and gently toss the cabbage to coat it, being careful not to break up the citrus slices too much. Add the remaining ¼ teaspoon of salt if desired.
  • Eat right away or refrigerate for up to 30 minutes before serving.
