When I think of cabbage, I think of coleslaw and cabbage rolls. I have a few scrumptious coleslaw recipes (below), but I’ve been shortsighted in cabbage’s versatility. Since it’s one of those winter veggies that’s so prolific, it’s time to get cracking on some new recipes. So here are a few purple cabbage recipes that have caught my eye!

If you’re wondering about the different between purple cabbage and red cabbage – it’s just color and it’s all just dependent on the ph of the soil!

In terms of cabbage varieties, there are differences. You can see a good image here of the types of cabbage, including bok choy, brussel sprouts, and kale. Green and purple cabbage are most commonly found in slaw recipes. Savoy and Napa cabbage have soft leaves and are quite delicious in Chinese food and in this cabbage pasta!

Ingredients

DRESSING

  • ยผ cup fresh orange juice
  • 2 tablespoons extra-virgin olive oil
  • ยฝ teaspoon fresh lemon juice
  • ยผ teaspoon garlic powder
  • ยผ teaspoon ground black pepper
  • ยผ teaspoon onion powder
  • ยผ teaspoon salt

SALAD

  • 6 cups red/purple cabbage thinly sliced (1 small head)
  • 2 navel oranges peeled and sliced
  • 2 mandarins peeled and sliced
  • 1 scallion white and green portion sliced
  • ยผ teaspoon salt or to taste

Instructions

  • Whisk together the dressing ingredients in a small bowl until smooth.
  • Place the cabbage in a serving bowl. Add the oranges, mandarins, and scallion. Pour in the dressing and gently toss the cabbage to coat it, being careful not to break up the citrus slices too much. Add the remaining ยผ teaspoon of salt if desired.
  • Eat right away or refrigerate for up to 30 minutes before serving.
