Growing up, I knew about orange carrots, and really only ate the little ones dipped in ranch. While the carrots dipped in ranch, the other way to eat carrots – steamed – was torture by my standards. I’m not much more familiar with the many types of carrots and delicious ways to cook them. But these purple carrot recipes are inspiring me even more!

Purple Carrot Recipes

I usually find purple carrots mixed in with “rainbow carrots” or “heirloom” varieties. I’ve only ever seen them sold individually at farmers’ markets – where you can pick out your own carrots.

While they might seem weird, they’re actually gorgeous inside and out and taste just like orange carrots. Purple carrots can range from bright yellow and orange to deep purple all the way through. And, not surprisingly, they’re LOADED with antioxidants – that’s how they get their great color!

PURPLE CARROT RECIPES

Ingredients

  • 1 pound small to medium carrots peeled if desired (about 8 carrots)
  • 1 tablespoon extra virgin olive oil
  • ยผ teaspoon fine sea salt
  • Pinch ground black pepper

Instructions

  • Preheat the oven to 400โ„‰.
  • Spread the carrots onto a rimmed baking sheet. Coat with the olive oil and sprinkle with the salt and pepper. Bake for 15 minutes. Stir gently. Bake for another 10 to 15 minutes, until they reach your desired tenderness. Baking times will depend on the size of the carrots. About 30 minutes for medium carrots leaves them tender with a slightly crunchy bite.
