You’ve been around long enough to know how much I love summer in general, but most especially I love entertaining in the summer. While schedules are difficult to coordinate, there’s always time for al fresco summer dinner parties and just casually having friends over for iced tea and nibbles or wine and inexpensive charcuterie

Summer Mocktail Recipes

There are all kinds of mocktails. Some are on the easier level of a sparkling water mixed with juice. You can mix it up with infused simple syrups (an insanely easy mix of sugar, water, and a fruit or herb on the stove).

And if you really want to jazz your summer mocktails up, use a shrub. What is a shrub? A shrub is an infused vinegar and water concoction. Don’t run away. They actually add a depth of flavor to any drink (alcoholic or not).

One of my biggest struggles the last few months has been finding something to drink (besides water or coffee) that isn’t insanely sweet to me. Shrubs are the best way to take the sweetness down a level that isn’t watering down the drink! Here are two methods to make homemade shrubs!

Even if you aren’t pregnant or avoiding spirits, I love homemade mocktail recipes in the summer when you need something to drink during the day or in the heat that won’t dehydrate you!!!

MOCKTAIL RECIPES

Enjoy the sweet tang of kiwis in this delicious spritzer perfect for any occasion. This kiwi spritzer is made with club soda and is delicious on its own or you can easily make this into an adult sip with your preferred spirit! Ingredients

  • 1 kiwifruit peeled and chopped
  • ½ ounce lemon juice
  • ¼ ounce simple syrup
  • Kiwifruit slices for garnish
  • Crushed ice
  • Club soda

Instructions

  • Set a small strainer over a bowl and mash the kiwi fruit to extract the juice. Let sit 5 minutes for the juice to drain. Discard the pulp and stir the lemon juice and simple syrup into the juice.
  • Line the sides of an 8 ounce glass with 2 to 3 slices of kiwifruit. Fill the glass with crushed ice. Pour in the juice then add club soda to fill the glass. Serve right away.

    What a great simple and sweet recipe. We don’t often use kiwis in my house so this is a nice change, and it makes such a refreshing drink. I prefer the grownup version, but my under 21 kid loved the mocktail version! Thanks for sharing!
