This strawberry slushie is a dream recipe – great for anytime, but especially if you have too many berries or they’re getting soft (which doesn’t matter for the slushie). There’s a hint of thyme and lemon to elevate it a bit. And everyone will LOVE it!

Strawberry season is FINALLY here this year. Strawberries appear mid-Spring and then they’re divine (see more Spring foods). We tried a few times for perfect strawberries this year at the farmers markets and grocery stores all to no avail. And then, one day, they were perfect and now we’re all in.

If you haven’t tried the combination of strawberry and thyme (with lemon of course), you are missing out. I know that’s a big statement, but I discovered the combination when I made the strawberry thyme jam wedding favors for our guests (ten years ago!) and have never looked back!

Strawberry is great on it’s own. And lemon is almost a necessity to add a tart punch with a bit of sweetness (just think of strawberry lemonade). The addition of thyme, in a thyme simple syrup, is like the umami that takes this from a strawberry lemonade slushie to something fit for grownups as much as kids!

One thing with getting good, fresh strawberries is that they don’t always last super long in your kitchen – no, not because you eat them all (though my 5 year old would argue otherwise). Strawberries don’t ripen after they’re picked, so their shelf life starts counting the moment they’re picked.

So when you get them to your kitchen, they’re already a day or two in. But you want them picked so fresh because they’re heavenly delicious. So what to do with any strawberries that are getting too soft? A strawberry slushie of course! You’re going to blend them up, so that they’re soft is actually helpful.

No, you don’t have to use very ripe berries – it’s just a great way to avoid food waste!

STRAWBERRY SLUSHIE

A yummy and refreshing strawberry slushie – fun for the whole family and a great way to use up all your strawberries (soft or otherwise).

Ingredients

Thyme Simple Syrup

  • โ…“ cup water
  • โ…“ cup sugar
  • 2 4" sprigs fresh thyme

Slushie

  • 2 cups hulled strawberries
  • 2 tablespoons Thyme Simple Syrup
  • 1 tablespoon fresh lemon juice
  • 1 cup ice
  • Strawberry and fresh thyme for garnish

Instructions

Thyme Simple Syrup

  • To make the thyme syrup, add the water to a small saucepan. Turn to medium-high heat and stir in the sugar. Stir often, until the sugar completely dissolves into the water and the syrup is clear, about 4 minutes. Once clear, let the syrup simmer for about 1 minute, until slightly thickened
  • Turn off the heat and add the thyme sprigs. Let cool completely while the thyme infuses the syrup, at least 30 minutes. Discard the thyme and strain the syrup if necessary to remove any stray leaves.

Slushie

  • Add the strawberries, cooled and strained simple syrup, lemon juice, and ice to a blender. Puree on high for 30 seconds smooth. Pour into two glasses, garnish with a strawberry halves and thyme, and serve right away.
