Egg White Bites

The older and wiser I get, the more I realize how important protein is (and breakfast for that matter). I don’t usually crave a big, heavy breakfast, however, so I’ve been looking for a good medium – protein, veggies, and not overly heavy. Enter egg white bites! Just like any egg dish such as this, the ingredients can easily be swapped out depending on preference and availability. No matter the cheese or veggie, however, these are delicious and easily made ahead of time for a good, healthy weekday breakfast!

Egg White Bites
I actually don’t mind egg bites with whole eggs, but there are certainly times when just egg white bites hits the spot – usually when I’m not too hungry but need some protein and a good, healthy snack to eat (clearly I eat these any time of day). The recipe below calls for broccoli and gruyere as well as parmesan cheese. There are so many ways you can make egg white bites, however.
Starbucks Egg White Bites
Starbucks has a variety with roasted red bell pepper, Monterey jack cheese, and some spinach (an immeasurable amount in my humble opinion). I enjoy those egg white bites too (more below on how to make those), but I always want a bit more flavor, so I use gruyere cheese!
The one thing that Starbucks does in all their egg bite recipes is to add cottage cheese to their “batter,” This adds protein, but it also give them that more custard-like consistency rather than a typical fluffy egg consistency.
My egg white bites recipe doesn’t call for cottage cheese, but you could try adding about ½ cup to the mix and then you can probably get about 10-12 egg bites.

How to Get the Egg White
If you’re wondering how to just get the egg white, I got you. It’s a pretty simple process, but one that feels better with some practice.
Chilled Eggs are Easier
Recipes call for room temp eggs – they cook more evenly. Separating egg yolk from egg white, however, is easier with chilled eggs. If you’re new to separating egg whites from yolks, I’d recommend just starting with them cold (the yolk just doesn’t want to break as easily).
Crack Eggs Gently
Crack the eggs that same way you usually do (I prefer the side of a bowl but many do a countertop). Over your bowl, gently pull apart the shell and tip the egg into one half of the shell. The egg white will naturally start to fall over the shell.
Switch egg yolk between shell halves
Then gently transfer the egg yolk between the shell halves over the bowl, slowly letting the egg white fall into the bowl.
Remove shells
You might get a little piece of shell into your egg whites. No problem. Use one of your egg shells (emptied of the yolk) to scoop it out of the bowl. Somehow those tiny pieces of shell can run away from human hands, but they come out pretty easily with a shell.
Save Egg Yolks in separate cup or bowl
Once you’ve got the egg white out, just pour the egg yolks into a separate container to use for another use (more below).

How to Reheat Egg Bites
These egg white bites are great to make ahead, making breakfast on weekday mornings easier! To reheat them, you can easily just microwave them for about 30 seconds each – perhaps on a lower level power (maybe 60-70%).
Since we don’t have a microwave, we usually reheat eggs in our toaster oven – 300°F for about 10 minutes!
How to Serve Egg Bites
With Hot Sauce
This is a very simple one – we love various hot sauces. Tapatio, sriracha, and Cholula are always in our pantry.
With an Aioli
Speaking of aioli (using up the egg yolks), an aioli is a classic sauce to serve with eggs. In Spain, the traditional tortilla de patatas (an egg and potato bake) is almost always served with a garlic aioli – and it’s DELICIOUS!
What to do with Leftover Egg Yolks
You know we don’t like food waste around here, so let’s find some ways to use up those egg yolks! A few quick an easy recipes for egg yolks include custards (these custard tarts are my favorite), lemon curd, aioli (yep, a yummy homemade dipping sauce), lemon bars, and to use for making baked goods golden brown when baking!

Breakfast Recipes with Eggs
but because variety is sometimes a necessary spice of life, here are a few other breakfast recipes with eggs. A fairly fast and easy one are these egg soufflés – a one pan or individual serving recipe. We also love these make-ahead breakfast tacos – originally a LowFODMAP breakfast recipe for my husband, it became a winner all around!
EGG WHITE BITES
Ingredients
- 10 large egg whites
- 1 cup shredded Gruyere cheese
- 1 cup cooked broccoli finely chopped
- 3 tablespoons grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Place a 9 x 13-inch baking pan on the bottom rack of the oven. Fill it halfway with water to create steam while baking. Preheat the oven to 300℉.
- Prepare a muffin tin with at least 8 wells and spray each well thoroughly with non-stick cooking spray or brush olive oil evenly (I use a silicone brush).
- Add the egg whites to a large bowl and whisk for about 30 seconds, until light and frothy. Reserve ¼ cup of the shredded Gruyere cheese and add the remaining cheese to the egg whites. Stir in the finely chopped broccoli, Parmesan cheese, salt, and black pepper until combined.
- Divide the egg filling evenly among 8 prepared muffin wells, using a spoon to distribute the broccoli and cheese evenly in each.
- Bake for 20 minutes. Carefully sprinkle the tops of the bites with the reserved Gruyere cheese. Return to the oven and bake for about 10 more minutes, until the egg bites have puffed slightly and are cooked through in the center.
- Remove from the oven and let cool in the pan for 5 minutes before carefully removing and serving.
