When we returned from the Fresno Fruit Trail a few weeks ago, there was one recipe on my mind to make. A few months ago, I attended a food blogger potluck. While potlucks are usually not my favorite, this one seemed to be everything wonderful I could imagine from a gathering of foodies and their favorite dishes. One mother-daughter blogging duo brought a burrata salad with fresh fruit and, not surprisingly, I loved it! I dreamed of making a breakfast salad with fresh fruit once summer arrived and with fresh fruit in hand, it was time…
Feeling pretty confident about the deliciousness of the breakfast salad, I tested it out last month when we went to our friends’ for brunch. Needless to say, it was a raging success! The honey, lemon dressing yields a slightly sweet flavor, which makes it better for breakfast. The lemon, however, does appropriately cut the sweetness from the honey and all the fresh fruit. I topped it off with my favorite honey granola as a ‘crouton’ of sorts and somehow it brought the whole thing together! Whereas usually a bag of salad will have leftovers in a party of four, we were all reaching for seconds to grab all the juicy fruit, burrata cheese, and tasty greens! The best part about this breakfast salad is that the fruit is interchangeable for whatever is in season – you could probably do some frozen or canned fruit in the winter months, though apples, oranges, and pears would be absolutely sublime!
Where to Buy Burrata Cheese
If you haven’t tried burrata yet, stop what you’re doing at once and go take care of that. It’s a very creamy mozzarella and it’s impossibly tasty. Trader Joe’s sells it for about $5
BERRY + BURRATA BREAKFAST SALAD
This salad is my summer version of a salad I had at a blogger get together a few years ago. A mother-daughter blogging duo brought a similar dish with persimmons and I couldn't get enough. Topped with cherries and fesh berries, it's the best way to enjoy summer fruit and add a healthy dish to your brunch spread.
- 4 Cups spring mix lettuce (5 oz.)
- 4 oz. burrata cheese
- 2 Cups berries (mixed)
- 1 Cup pitted cherries
lemon, honey dressing
- 1 teaspoon honey
- 1 Tablespoon olive oil
- 1/2 lemon, juiced (approx. 1 Tablespoon)
- 1/4 teaspoon salt
- 1/4 teaspoon fresh cracked pepper
- In a large bowl, microwave honey for 10 seconds. Mix with remaining dressing ingredients. Toss with lettuce. Remove to serving bowl.
- Just before serving, pull burrata apart over salad. Top with berries and cherries.
