You all, I am a sucker for a fruit crisp, cobbler, or crumble. I can’t resist them if they’re ever on a dessert menu. And while fresh and frozen fruit are both great in these recipes, there’s just something so magical about using perfectly fresh, in-season fruit, isn’t there? So get yourself CUPS of blackberries because you’re going to fall in love with this easy blackberry cobbler recipe.

Having grown up on fruit crisps and cobblers, there’s something nostalgic about these dishes. And while this might feel like an old fashioned blackberry dessert, it’s anything but boring or bland.

As a self-proclaimed expert on these desserts, I often get a lot of questions about what the difference is between a crisp, a cobbler, and a crumble, so here’s the answer.

What is a Crisp?

A crisp is a fruit dessert with a crunchy topping, usually with oats, nuts, and brown sugar. This recipe for apple pear crisp is my go to for the perfect crunchy, crispy topping (no matter the fruit). Crisps are ideal for mild-flavored fruit and soft fruits.

What is a Cobbler?

A cobbler has a biscuit-like topping (like the one seen here). Imagine fruit with slightly sweetened bread on top. I think cobblers are best with fruits packed with flavor (like blackberries) because they biscuit really mellows the flavor and marries it all nicely together.

What is a Crumble?

A crumble is fruit topped with crumbles of a sweetened mixture – and very little of it. It’s the lightest topping of the three – in flavor and in density. Often the fruit is still the visual center of a crumble. Because this is such a light flavor topping, it’s often done with berries (but I’d prefer blueberries, raspberries, and strawberries in this way).

There’s no hard and fast rule about which fruit goes with which style of fruit dessert. I’m just sharing what I prefer! And if you’re ever in doubt, just serve it with vanilla ice cream!

Blackberry Cobbler Recipe Ingredients

There are two parts to a cobbler – the fruit mixture below and the biscuit topping. It’s this simple two-step layering that keeps this cobbler recipe so simple and straight forward. There’s no resting time, just some patiently waiting while it cooks and cools time!

Blackberry Mixture

The fruit mixture is just an easy combination of:

  • berries
  • sugar
  • flour (for thickening)
  • lemon juice

Biscuit Topping Ingredients

The biscuit topping is made of:

  • all purpose flour
  • sugar
  • salt
  • melted butter
  • vanilla
  • milk (with fat content – 2% or whole)

Optional Topping

I don’t think this part of the blackberry cobbler recipe is optional because it’s so delicious and still easy, but it’s not mandatory (I guess)!

How to Make Blackberry Cobbler

Make the Filling

Combine the blackberries, sugar, flour, and lemon juice. Add them to a greased baking dish.

Make the Biscuit Batter

Combine the ingredients for the biscuit batter as instructed – flour, sugar, salt, melted butter, vanilla, and milk with fat content. Scoop the batter over the berry filling to cover it.

Add Optional Toppings

Top the batter with cold, cubed butter, sugar, and cinnamon before baking.

Bake Cobbler

Cobbler bakes at 350°F for about 45 minutes until biscuits are lightly browned and the fruit juices are bubbling (seen along the sides).

How to Serve Blackberry Cobbler

A true old-fashioned blackberry cobbler would be served with a scoop of vanilla ice cream! I’d let the cobbler cool a bit or serve at room temperature, but that’s because I like to keep the ice cream from melting quickly.

If my mom were making this easy cobbler recipe, she’d top it with homemade whipped cream. If I were serving this to grownups, I’d absolutely do the alcohol-infused whipped cream (same recipe link) with either an amaretto or brandy!

Ingredients

Filling

  • 5 cups fresh blackberries
  • ½ cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh lemon juice

Biscuit Topping

  • 2 cups all-purpose flour
  • cup sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • ¾ cup 2% or whole milk

Finishing Topping

  • 2 tablespoons unsalted butter cold
  • 1 tablespoon sugar
  • Large pinch of cinnamon

Instructions

  • Preheat the oven to 350°F and spray an 8 by 8-inch baking pan with nonstick cooking spray or grease with butter.
  • Make the filling and stir together the blackberries, sugar, flour, and lemon juice. Transfer the filling to the prepared baking pan and spread evenly.
  • Next, make the biscuit topping. Stir together the flour, sugar, and salt. Stir in the melted butter and vanilla. Gradually stir in the milk until a thick, scoopable batter forms. Add scoops of the batter over the berry filling to cover it.
  • To finish, cut the cold butter into small cubes and scatter over the biscuit topping. Stir together the sugar and cinnamon and sprinkle over the biscuit topping.
  • Bake for about 45 minutes, until the topping begins to brown and the filling is bubbling. Remove from the oven and serve warm or at room temperature.
