30 Winter Soup Recipes

It’s soup season! Ok, that’s silly because I actually like soup year round, but I especially crave it this time of year! And I think I’ve figured out how to get my husband and son to enjoy soup too – neither of them likes a lot of broth, so I just go lighter overall and especially in their bowls. Ok, but that weirdness aside, let’s talk about all the winter soup recipes out there! The ones below are just the tip of the iceberg from creamy to brothy, meat-forward to vegan – there are many options for everyone!!

Best Winter Soup Recipes
I haven’t made all of these soups (don’t think I won’t try this winter though). Rather this is a mix of types of soup recipes and soups for every kind of diet and preference. You know, some nights you want a hearty, creamy soup. Other times, you crave something simpler and nourishing. We’ve got it all here.
And since I basically never follow a recipe exactly, everything can be altered to what you have on hand and what you like best!!
What is a Good Winter Soup
What isn’t a good winter soup? No, just kidding. As I mentioned above, I think it depends on your mood, your health, and your preferences. Sometimes I want a flavor packed chili or Thai-inspired bowl of soup. Other days you can bet all I want is some version of a chicken noodle soup.
I think it also depends on what else you’ll be eating. Is the soup the main dish? Is it a starter and there’s more meal to come?
The only thing I really think matters in a good winter soup is using seasonal ingredients. It’s why you’ll see lots of carrots, onions, broccoli, kale, parsnips, etc. in these recipes. In California we’re ‘lucky’ enough to be able to get produce from around the world at nearly any given time, but it just doesn’t taste as good when it isn’t in season.
And your soup is only going to be as good as the ingredients you use. So try to use seasonal, try to use local. Beyond that, just do your best!

1. One Pot Lentil Soup
One of my favorite recipes I’ve ever made – I don’t even need the recipe any more. this one pot lentil soup is taken to the next level with a finishing dash of of balsamic vinegar. A light, healthy and protein-packed soup, this will be a favorite again and again for you!
2. Roasted Garlic Soup
This soup is certainly garlic forward, but it also has lots of chicken for great protein and onion and carrots for some nutrients. Cheddar cheese and heavy cream give this roasted garlic soup that hearty creaminess!!
3. Mushroom Noodle Soup
A vegetarian winter soup recipe that’s creamy, hearty, and yummy. Egg noodles mix with mushrooms in this mushroom noodle soup. A glorious one pot recipe, top with freshly chopped herbs for that finishing touch of flavor

Inspired initially by lots of Thanksgiving leftovers, this leftover turkey chili is a favorite for anytime we have leftover turkey or chicken meat. It’s easily shredded and added to traditional tortilla soup flavors – just sub in pinto beans. It’s delicious!!
6. Creamy Chicken Gnocchi Soup
Another great recipe for leftover white meat, this Creamy Chicken Gnocchi Soup is packed full of deliciousness. Coked chicken, onion, and carrots are cooked in a combination of olive oil and butter before getting all the extra flavor additions like the broth, garlic, and seasonings. And don’t forget the gnocchi and fresh spinach! YUM!
7. Parsnip & Apple Soup
If you haven’t tried parsnips yet, don’t be afraid. They have a consistency similar to carrots and have a sweet earthy flavor. I like to roast carrots and parsnips together. This parsnip and apple soup is a yummy soup featuring the root vegetable along with potatoes and some delicious spices. This one would be great as a starter or side as well as a main dish.

8. Broccoli Potato Soup
I love the flavors of broccoli potato soup, but I always find it so heavy, so this one isn’t laden with cream, but rather it has a broth base and you can still see the ingredients. This vegan broccoli potato soup is great as a starter served with crostini or as a main dish served with a lovely piece of bread (of these savory biscotti).
9. Amish Beef & Vegetable Soup
A classic soup recipe with ground beef and celery, carrots, and onion – a traditional mirepoix! Add in canned green beans and corn (since neither are in season now) and you’ll be craving this Amish beef and vegetable soup every week. This soup starts with the onion, celery, and carrot (mirepoix in French, it’s called soffritto in Italian). You can use pearled barley or quick barley – I’ve always like Trader Joe’s quick cook farro and barley.

30 WINTER SOUP RECIPES
Ingredients
- 3 tablespoons extra virgin olive oil
- 2 cups chopped yellow onion
- 1 cup chopped carrots
- 2 garlic cloves minced
- 1 cup chopped crimini mushrooms
- 5 cups vegetable stock
- 1 cup brown lentils rinsed and drained
- 1-14.5 oz can diced tomatoes in juice
- 1 4-inch sprig fresh rosemary plus more for garnish
- Fine sea salt and black pepper to taste
- good balsamic vinegar
Instructions
- Heat the oil in a soup pot over medium-high. Add onions, carrots, and garlic and cook until they begin to soften – about 7 minutes.
- Add the mushrooms and cook until they shrink and darken and the rest of the vegetables are browned – about 5 minutes.
- Add 4 cups of the stock, lentils, and tomatoes with their juice, and the sprig of rosemary, and bring to boil. Reduce heat to medium–low, partially cover and simmer until lentils are tender, about 25 minutes. Discard the rosemary stem.
- Transfer 2 cups soup to a blender and puree until smooth. Return puree to the soup pot. Stir in the remaining 1 cup of stock and cook over low heat until all ingredients are warm, 2 to 3 minutes.
- Season with salt and pepper as desired. Garnish with small sprigs of rosemary before serving.
- Add a dash of balsamic vinegar to individual servings.
