After spending two days with food bloggers at an ice cream tasting event last week, I’ve been working hard to get back to my normal swing of things. I’m all for the delightful indulgence, but it was a bit of an overload. And I’ve decided that people think food bloggers eat nonstop because every such event not only provides amazing food, but there’s something new to try every time I turn around! I love all the taste-testing, but sometimes I just need some carrots and a good workout! With all those demands on my part, I thought I’d try out this cucumber juice recipe and mix it with some probiotic coconut water for the perfect thirst-quencher that was tasty and good for a bit of a slow down in the eating department.
Cucumber Juice Recipe
I’ve mentioned a few times already that the juice craze is crazy, but the notion of juicing all sorts of fruits is wonderful. I’ve made cucumber lemonade, chardonnay sangria with cantaloupe juice, and my personal favorite watermelon fizz with fresh watermelon juice. The thing is, you don’t have to spend $8 or whatever obscene price it is to get great quality juice. Just get out your blender or food processor and add the fresh fruits. For cucumber juice, you need to peel the skin off obviously, but otherwise, just small chunks into the blender and you’re good to go!
So this week, and beyond, it’s all about simple, wholesome ingredients centered primarily around vegetables, fruits, and whole grains. Sound a bit more familiar? This cucumber juice recipe with coconut water is super refreshing and only has cucumber juice and coconut water. It’ll be perfect in those hot summer temperatures too!

CUCUMBER JUICE RECIPE | COCONUT WATER
The juice craze can be overwhelming, but it's also brought about a realization of all the great produce we don't juice. Cucumber juice, for example, is very easy to make and so very refreshing. Mix it with some coconut water for the perfect summer cooler!
Ingredients
- 2 cups peeled cubed cucumber
- 1 1/2 cups coconut water I used Good Belly Probiotic Juice
Instructions

Place cucumber pieces in mini food processor. Pulse to puree.

Place fine mesh sieve over bowl or measuring cup. Line with coffee filter or cheesecloth. Place cucumber puree in lined sieve. Gently stir cucumber to release liquid. 1 Cup cucumber yields 1/4 Cup juice.

Combine 1/4 Cup cucumber juice with 3/4 Cup coconut water.
