I returned from a quick trip to Northern California last night and after a birthday soiree for T tonight, we’re off again for a short weekend getaway to Temecula with some relaxing and wine tasting. February and March have been super busy (as usual this time of year in my world) and things are starting to wind down in terms of travel, so an overnight getaway to celebrate his birthday sounds pretty spectacular to both of us!
St. Patrick’s Day is next week. I always love being festive for holidays but try not to splurge too much or spend too much energy. These healthy green recipes are all naturally green and naturally delicious!
There are so many green fruits and vegetables that you can really get inventive or use a standby recipe to stay on theme without much effort. If T liked broccoli at all, that would definitely be my first choice, but luckily there are tons of other healthy green recipes from which to choose.
A recipe I adapted from my mom and probably too many hours in front of The Food Network (luckily it paid off, I think)! This recipe is always a favorite, even for those on the fence about vegetables with dinner! The almonds add the perfect little touch of crunch!
This may be my favorite recipe of all time. The flavors blend so wonderful. It’s good warm or cold. And we’ve even experimented with mixing the leftovers into a egg batter and baking it for a soufflé type dish. It is delicious!!
Hands down my favorite recipe of mine. This is the perfect easy weeknight meal! Add a protein of choice or just enjoy as is – the perfect healthy green recipe for next week and all year!
A favorite of mine but sadly not T’s, this soup has no dairy, using the veggies to make that creaminess. It’s super healthy and really filling if it’s still frigid outside!
