We need some more color in our life these days, don’t we? If I didn’t convert you to love radishes with these roasted radishes, then let me seal the deal with radish toast with goat cheese and flaked sea salt!

Radishes are one of those things I’d never given much attention to. I think I discovered them on the veggie tray at my French-themed bridal shower. We brought home the leftovers and I realized I loved crudite and that radishes weren’t just for color!

I bought some more some time later and assumed I need to do the crudite again. That was silly, but whatever got me eating veggies, right?

Only since discovering my husband could eat them on his LowFODMAP diet did I decide to buy them again. And now with some extra in the house, I’m dreaming up more conconctions (i.e. radish toast with goat cheese, sea salt, and – OBVIOUSLY – bread).

Easter Radishes

Common radishes in market have that bright red/pink skin. What you might find available now are Easter Radishes. They have purple, red, and pink skins. They’re so beautiful! A highlight in the spring produce repertoire (see more spring foods)!

The size of these radishes also tends to vary, giving you a wonderful assortment to make your food a little more artistic!

If you just placed sliced radishes on top of tasty goat cheese (you have to try the chevre from Stepladder Creamery) on top of sliced, toasted baguette – it wouldn’t be bad. Let’s be honest.

But if you really want to kick these toasts up to the next level (and make them memorable), the flaked sea salt and chives are musts.

Radishes can have something that resembles a peppery taste, so pairing it with the salt, it’s a classic combination. And, truth be told, chives make everything better in my humble opinion!!

If you just need every meal served on a lovely piece of toast, try this smoked salmon toastspicy avocado toast, a tuna tartare tartine for two, beautiful mushroom toast with burrata, some zucchini and ricotta toast, or this ceviche avocado toast!

On the sweeter side, this blood orange crostini is positively perfect! One loaf of bread and you’re set for the week on meals!

Ingredients

  • 8 to 10 slices baguette toasted
  • 4 ounces chevre
  • 3 tablespoons chopped chives
  • 5 to 6 large radishes sliced
  • Flaked sea salt

Instructions

  • Spread an equal amount of goat cheese over each slice of baguette. Sprinkle with half the chives.
  • Layer 3 to 4 radish slices over each piece of toast. Sprinkle with remaining chives and flaked sea salt before serving.
